Even very well-behaved winemakers like to push the boundaries from time to time. The Hidden Cave, a new label from Devil’s Lair, has allowed our guys to do exactly that – experiment with tastes and textures, and come up with a range of Margaret River wines ‘with a twist’.
Oliver Crawford, chief winemaker, encouraged the team to let their inner devil loose, resulting in some very fine varietal wines that are all a little unexpected. Rather than the usual Margaret River Cab Merlot, for example, The Hidden Cave Cabernet Shiraz uses shiraz to bolster the palate with lovely black berry fruit. Likewise, The Hidden Cave Sauvignon Semillon Blanc is a water white wine that springs a tropical surprise of passionfruit, mango and gooseberry on the palate. And The Hidden Cave Chardonnay is a controlled explosion of flavour, seamlessly integrating peach, nougat and spice. It’s definitely something a little different from Devil’s Lair – and the Margaret River, for that matter – but also definitely not to be missed.
