“There’s a lot of nonsense spoken about matching wine with food, like the old prohibition against ordering red with fish. Well, I’d never be that prescriptive about choosing a wine to accompany a meal. You should do what you enjoy. However, some wines and foods complement each other perfectly, and it’s worth giving it a go just to see how good they taste together. Our new range, The Hidden Cave, for example, has some terrific food pairings. I’ve tried the Sauvignon Blanc Semillon with oysters, and the wine’s tropical flavours really balance their brininess well. I imagine most shellfish would pair nicely with it.
The Chardonnay, on the other hand, has a peachy acidity that suits something more savoury, like a cheese souffle. And I’ve found the lovely plumminess of the Cabernet Shiraz is wonderful with braised meat dishes – beef cheeks, for example – where the richness of the dish needs a red that can match it. Anyway, they’re my thoughts. Results may vary. If you find any perfect matches for our wines, please let me know. Good drinking!”
